Red Wine 100% Monastrell , from D.O.Yecla.
Inspired by the philosophy of natural branch of the Theory of Knowledge, this wine, Epistem, is the product of two paths that lead to the truth in nature: logical reasoning and sensory experience. Applying analytical thinking to the manifestations of nature.
It´s a wine with a sensory profile that we feel approaches the ideal. Comes from a limestone soil, continental climate with little rain between April and September, organically-farmed vineyards. Harvest in small boxes, manual selection of the grapes, fermentation in open-top fermenters.
The grapes were destemmed and then macerated in the cold. The wort was fermented at controlled temperature in open barrels and the malolactic fermentation was carried out in a French oak barrel of 500 L. It was grown in the same barrels for 26 months.
Perfect to enjoy with baked pork, grilled rabbit, veal stews, raw pasta cheeses. Optimum consumption up to 2024.

Phillipe Bramaz, formally trained as a winemaker, takes his inspiration from people who respect the terroir and counts Henri Bonneau as one of his mentors.
