Red wine from the island of Menorca, made with the varieties 37% Cabernet Sauvignon, 35% Ull de llebre and 28% Syrah.
Intense cherry color clean, bright and ruby rim. In the nose we find the fusion between breeding and fruit component, the balance of vanilla, smoke, spices and notes of jam, licorice and toffee, all very defined. In the mouth, although it looks very soft, we discover an acidic and tannic structure perfectly offset by the alcohol, which show the body that actually presents and opens so many possibilities of marriage. Postnasal highlights the caramel component, toffee, a complete fusion of the elements of breeding and candied fruit. Aged for 14 months in barrels of French and American oak.
Winery located in the municipality of Ciutadella de Menorca, created in 2007. The vineyard has an area of three hectares, has 12,000 strains of varieties: Cabernet Sauvignon, Tempranillo, Merlot and Syrah for red and Chardonnay and Macabeo for white varieties. After a long period of experimentation, it has released a line of premium wines, well-crafted, symbolizing the recovery of the long Menorcan wine tradition. Winery facilities are underground, perfectly adapted to the environment, respecting visually beautiful surroundings. Such winery fully excavated in seas maintains optimum temperature steadily, without large oscillations providing appropriate wines for aging conditions. Although much of the vineyard tasks are performed by hand, the facilities dedicated to the production have modern stainless steel tanks and latest machinery.
Part of the success of the first wines of this winery are the result of close collaboration of winemakers with the settled Catalan winemaker in Menorca, Fernando Castan, who has turned his experience and good work in the first Binitord blanc Chardonnay, Binitord Rosat and Binitord Negre, this latter one is an interesting blend six months of aging that surprises by its originality.
