With a limited production of 16,500 bottles, is born a white willing to love . A wine undergoes a very rigorous processing system in search of the fullness of aromas and length in the bottle.
This white wine of the winery Terras Gauda, from the D.O Rías Baixas, is a blend of the grape varieties Caíño White ( 85 % ) , Albariño ( 10%) and Loureiro ( 5%). The variety Caíño White is a variety with a very late maturing , a very delicate and sensitive to fungi that requires many interventions in the vineyard grapes, but in turn is a variety capable of transmitting to the maximum all the characteristics of terroir .
The harvest is done manually and the grapes are transported to the winery in 20 kg boxes to avoid breakage before reaching cellar. The different varieties are vilified separately cold maceration, which left longer Caíño variety, a variety with a high percentage of skin, thus taking advantage of the extraction of the aromas is performed.
After the fermentation and courage La Mar remains with its lees for at least 3 months with periodic battonages. Then allowed to stand at low temperature for 6 months until bottled, where it is allowed refine for at least 7 months before going to market.
La mar will have an evolution in bottle over the next 3 years, gaining complexity and maturity.
