Fermentation during for 11 days in tanks of 3,000 liters at 26 ° C temperature. Soaking in deposits 20 days to 3.000 liters. Aging, malolactic fermentation in French oak barrels of 300 liters and aged 21 months in new French oak barrels of 300 liters.
