Gallinas y Focas, a wine with high human content

Phocas & Gallinas wine (90% Manto Negro y 10% Syrah) V.T Mallorca, which launched in collaboration with an organization of intellectual disabilities , who are fully involved in the development and even chose the name of the wine. “The  2012 Gallinas y Focas has increased the amount of Manto Negro, a variety from the north of the island, and in this vintage contains no more than 10% Syrah. The whole berries fermented in 40,000-liter oak vats with some 30% of the foudre fermented in 500-liter barrels with the lees, in a reductive atmosphere. It is then aged for one year in barrels and a half-year in the vat and bottled with very low sulfur. Manto Negro is a grape with very little color that translates into the wine with a slightly volatile nose showing hints of spices, leather and a mixture of red and black berry fruit that have a slight earthy, organic side. 

The palate is medium-bodied and a little austere with an elegant and fresh texture halfway between a Côte de Nuits and a Northern Rhône Syrah. It develops licorice, fennel and aniseed notes with time in the glass. It is a wine of character that would please the more conventional consumers as well as more audacious ones.” The Wine Advocate.

Winemaking, manual selection of the grape. 70 % was made in foudres 400 liters , and 30% in barrels of 500 liters. In the fermentation without reaching 20C temperature . It macerated between 20 and 25 days . Malolactic in barrels of 500 liters.

Aging, for 12 months in Allier French oak barrels of 500 liters. During 6 months of 4000 liters roure foudre French and during 6 months of aging in bottle.

Rarely we find asuch a unique project  as the 4 Kilos Winery. Starting with its name , which refers to the 4 million pesetas who brought their partners to create the winery.

One of his partners had already worked in the winery Anima Negra and another is one of the founders of the festival SONAR. The result of this unequal association is a range of wines that exude creativity and love for the Mallorcan native varieties . Made with grapes like Callet , Manto Black or Fogoneu , groundbreaking choose labels for each vintage of wines , with nods to world music, avant-garde comic or illustration.
